Barbecued or Oven-baked sardines

  • 8 sardines,washed and gutted
  • 2 tbsp olive oil
  • sea salt and pepper to taste
  • squeeze of lemon

Baked sardines with lemon and olives

  • around 1kg of fresh, scaled, cleaned, bones removed, heads
    removed sardines
  • 60g of chopped olives
  • 4 minced garlic cloves
  • 1 tbsp fresh oregano chopped
  • 2 lemons juiced
  • 1/4 cup extra vergin olive oil
  • crusty bread to serve

EASY PEASY

  1. Heat the barbecue or oven( 180° )for direct cooking
  2. Rub the oil all over the sardines
  3. Arrange the fish in a single layer on the barbecue or oven(6 min) and cook for 2-3 mins on each side, or until cooked and charred
  4. Remove from the heat and season to taste

INSTRUCTIONS

  1. Preheat oven to 180 ° 
  2. Lightly coat a baking dish with olive oil
  3. Fold sardines in half and arrange in prepared dish. Season. Sprinkle olives, garlic and oregano over top then drizzle with lemon juice and
    olive oil. Bake for 15-20 mins, until cooked through. Serve with crusty bread
