Rainbow trout get their name from the colours that shine on their skin. Colours on the back of a trout can range from brown,to olive, to dark blue. All rainbow trout have a pinkish band running the length of their body. There are small black spots on their back, fins, and tail



Easy Peasy grilled Trout

  • 2 trout fillets
  • 25g fresh breadcrumbs
  • 1 tsp butter, softened
  • 1 small bunch parsley, chopped
  • zest and juice of 1 lemon, plus lemon wedges to serve
  • 1 tbsp olive oil

Pan-fried trout with garlic,lemon&parsley

  • 2 skin-on trout fillets
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 3 tbsp chopped, fresh parsley
  • 1 tbsp lemon juice
  • sea salt and pepper to taste


  1. Heat the grill to high
  2. Lay the fillets, skin side down, on an oiled baking tray
  3. Mix together the breadcrumbs, butter, parsley, lemon zest and juice
  4. Scatter the mixture in a thin layer over the fillets, drizzle with the oil and place under the grill for 5 mins 
  5. Serve with lemon wedges and potato salad 


  1. Heat a non-stick frying pan over medium-high heat, and melt butter with olive oil
  2. Cook trout fillets, skin side down for 2 min, then carefully flip with spatula
  3. Cook for another minute or until almost cooked through
  4. Add garlic, parsley and lemon juice and continue cooking 
  5. Cook for another minute or so until the fish is golden brown and the flesh flakes off easily with a fork
  6. Transfer to serving plates
